An Alaskan woman purchased a cake slice, only to notice something was off. Now, she’s warning her audience about a little-known bakery bacteria that can cause a great deal of pain and sickness.
LittleHouseBigAlaska (@littlehousebigak) posted a video that received more than 1.3 million views. In it, she pointed out a glaring issue with a slice of cake that much of her audience wouldn’t have noticed. That is, the baked good had rope spoilage.
The content creator explained what rope spoilage is, how it happens, and how to notice it. She also explicitly told her audience not to eat products that appear to have undergone rope spoilage, lest they get food poisoning.
What is Rope Spoilage?
Rope Spoilage, per Bakerpedia, is “a quality defect in bread caused by microbial activity … caused by several strains of spore-forming Bacilli.” As bakers create varying products, they may contain microscopic strains of bacteria, which are resistant to heat and can survive baking. As LittleHouseBigAlaska points out, food with rope spoilage can cause food poisoning if consumed.
On r/breaddit, one of Reddit’s most popular baking communities, a few people explained where the name actually comes from. One user said that the mold breaks the bread down, “causing it to be soft, sticky, and sweet-smelling, with characteristic web-like strands coming from the bread as a result.”
Rope spores, another user points out, are different from regular yeast and fermentation ones.
“Rope spores are a type of ‘wild’ yeast that need a higher temperature to be destroyed, above 180°F (82°C), ideally 200°F (93°C) internal temperature,” they said. “The other key thing is that bread loaves need to be cooled properly, and not left stacked together or in pans, or [a] Dutch oven while cooling. Improper cooling gives any small number of spores that might have survived baking the opportunity to quickly divide and replicate.”
Her Cake Slice Was Riddled With It
LittleHouseBigAlaska may have noticed a big issue with her slice of red velvet cake, but her viewers didn’t. The cake’s deep color and overall sticky-looking appearance can, as it turns out, hide rope spoilage.
A few commenters told the content creator that they had inadvertently eaten cakes with rope spoilage before without knowing.
“I’ve 100% eaten this before thinking it’s just sticky,” one viewer said.
Another commenter added, “My problem is I woulda [eaten] it too fast to even notice.”
A third commenter said, “Dude. I have ate this. Thinking it was sugar lines or like stringy sugar.”
The Warning Signs
Luckily, LittleHouseBigAlaska provided her commenters with a guide on what to look for. “What you need to look for are baked goods that are sitting out and probably covered, but they’re getting moist and warm at room temperature … They’re being left there for up to 72 hours.”
She told her audience that products infected with rope spoilage will smell “really sweet—like something’s rotting.” She added that upon cutting into a product with rope spoilage, most people will see “thin, wispy” spiderweb-like formations.
The content creator then revealed something about the cake in her video as a cautionary tale. “This cake came from an established restaurant,” she said. “It was not some cottage food industry baker. … It was in a restaurant selling cake by the slices.”
In other videos, she explained that it isn’t just cake slices that are affected by rope spoilage—it’s all baked goods. And, as she pointed out, commercial kitchens are not safe from rope spoilage. For that reason, she’s warning her audience to look out for sugary, rope-like sections in bread loaves, cookies, and cakes. Otherwise, a sweet treat can lead to a sick day.
